		<description>Good for you!  I canned cherry jam last night, myself, the first I have ever done.  It IS a lot of sugar, but then, I do have a sweet tooth.  I did not know you could just can the cherries in syrup.  I&#039;ll have to check that out, since I love cherries so much..  My next purchase is the Blue Ball book....too many recommendations to ignore. 

Good luck in your continuing efforts to save money and living more basically.  I am working on it too.  Just trying to get back to how people lived in earlier times and bring back some of the survival skills of our grandparents and great grandparents.  I want to have my kids (grown) and grandkids see that these skills and techniques are useful for NOW and the future; they are not just relics of our past.

My cherries were wonderful, and no the ones on top of the syrup did not effect the batch at all.  The syrup preserves it to some extent, but ultimately the acid in the cherries and the vacuum is what keeps them.  If you are concerned about the ones on top discoloring a bit you could tip them from time to time to turn them, but it is just an aesthetics thing.  Good luck and I strongly recommend the Ball Blue Book, it truly is the best source around for canning.</description>
