I stumbled on your journal while googling canning, I think. Anyway, I was struck by the similarity of what we are dealing with in terms of how we live in the world. Eating locally, adventures in canning, gardens, fiber art (I do rug hooking). Nice to know there’s someone else out there working through the same sorts of issues. About canning cherries- I noticed you canned cherries last year. I recently did it for the first time and noticed in mine, and in your photos, that some of the cherries are poking out of the syrup. Will these cherries be preserved or will they ruin the batch? What was your experience?

My cherries were wonderful, and no the ones on top of the syrup did not effect the batch at all. The syrup preserves it to some extent, but ultimately the acid in the cherries and the vacuum is what keeps them. If you are concerned about the ones on top discoloring a bit you could tip them from time to time to turn them, but it is just an aesthetics thing. Good luck and I strongly recommend the Ball Blue Book, it truly is the best source around for canning.
